Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potato
Its starch thickens the soup and gives it body as it cooks and breaks down.
Celery
Provides the main fresh, savoury celery flavour of the soup.
Onion
Adds aromatic sweetness and depth as it softens during cooking.
Butter (in the method)
Adds richness and a smooth, silky mouthfeel as a fat.

The step that matters

Rub through a sieve. The vegetables must be fully tender before sieving. Undercooked fibres will not pass through the sieve, leaving the soup grainy instead of smooth.

Swap the onion

How well each one fits the dish's main ingredients (celery, potato, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits better
  4. Onionthe original

Fit is the average pairing score against celery, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
