Baked Calf's Head

Ingredients

Directions

Prepare the head

  1. Boil a calf's head (after having cleaned it) until tender.

  2. Split the boiled head in two and keep the best half (bone it if you like).

  3. Cut the meat from the other half into uniform pieces the size of an oyster.

Roast the head

  1. Put bits of butter the size of a nutmeg all over the best half of the head. Sprinkle pepper over the buttered half and dredge it in flour until it looks white.

  2. Set the buttered half on a trivet or muffin rings in a dripping-pan.

  3. Put a cup of water into the pan and set it in a hot oven.

  4. Turn the head so it may brown evenly and baste once or twice.

  5. While the head is roasting, dip the prepared meat pieces in wheat flour or batter.

  6. Fry the dipped pieces in hot lard or beef drippings until a delicate brown.

  7. Season the fried pieces with pepper, salt, and slices of lemon if liked.

  8. When the roast is done, put it on a hot dish and lay the fried pieces around it.

  9. Cover the roast with a tin cover.

Make the gravy and serve

  1. Put the gravy from the dripping-pan into the pan in which the pieces were fried, with the slices of lemon, a tablespoonful of browned flour, and, if necessary, a little hot water.

  2. Let the gravy boil up once and strain it into a gravy boat.

  3. Serve the roast with the meat.

What each ingredient does

Calf's head (in the method)
Forms the main meat; boiling first makes it tender before roasting.
Butter (in the method)
Adds fat and moisture, helping the surface brown evenly in the oven.
Flour
Dusting and batter form a crust that browns and helps the gravy thicken.
Lard or beef drippings (in the method)
Fat for frying the coated pieces, giving them a crisp, golden surface.
Lemon (in the method)
Adds acidity and brightness to the fried pieces and gravy.

The step that matters

Frying the dipped pieces until delicate brown. The coated pieces cook quickly in hot fat; too little heat makes them greasy and pale, while too much browns the flour coating before the meat is heated through.
