String Beans

Ingredients

Directions

Prepare

  1. Break off the end that grew to the vine, drawing off the string along the edge.

  2. Repeat the same process from the other end.

  3. Cut the beans with a sharp knife into pieces half an inch long.

Cook and season

  1. Boil them in just enough water to cover them.

  2. Boil for about one hour, depending on age and freshness.

  3. When the water has boiled nearly out and the beans are tender, add pepper, salt, a tablespoonful of butter, and a half cup of cream.

  4. If no cream is available, add more butter.

  5. Drain the beans before adding the seasoning (optional).

  6. Note that draining before seasoning may reduce the vegetable's real goodness.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and fat, giving the cooked beans a smooth, rounded flavour.
Cream
Adds moisture and richness, softening the beans' flavour into a creamy finish.

The step that matters

Boiling until tender. Beans vary in age and freshness, so cooking time varies widely. Boiling until nearly all the water is gone concentrates the flavour and lets the cream and butter coat the beans rather than thin in liquid.
