Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams (in the method)
Provide the main flavour and texture of the soup as chopped pieces.
Butter
Forms the fat base of the roux that thickens the soup.
Flour
Thickens the liquid when cooked with butter to form a roux.
Milk
Adds creaminess and body to the clam juice.

The step that matters

Bring the soup to the boiling point. Once the roux and milk are combined, overheating or boiling too hard can cause the milk to scorch or separate. Heat gently until the soup is hot and has thickened.
