Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped eggs add air and structure, helping the cake rise and set.
Flour
Provides the structure that holds the cake together as it bakes.
Butter
Adds fat for a tender crumb and rich flavor.
Granulated sugar
Sweetens the cake and helps hold air when beaten into the butter.
Baking powder
Releases gas during baking so the layers rise.
Milk
Adds moisture and loosens the batter to a pourable consistency.

The step that matters

Add the whipped eggs alternately with the flour. Folding eggs and flour in alternate additions, and mixing lightly, keeps the air bubbles from the whipped eggs intact. Overmixing knocks out air and develops gluten, which can make the layers dense.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, butter, milk, egg, flour):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, butter, milk, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
