Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Its starch swells as it cooks, thickening the pudding and making it turn clear.
Milk
Provides the liquid base and creamy richness of the pudding.
Eggs
Yolks thicken and enrich the mixture, while beaten whites add lightness to the texture.
Sugar
Adds sweetness and helps balance the flavor of the pudding.

The step that matters

Cook until the mixture becomes perfectly transparent.. Tapioca starch must cook fully to swell and gelatinize. Undercooked tapioca stays cloudy and grainy, so the pudding will not thicken or set evenly.

Swap the lemon
