Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Nutrition, whole recipe (rough)
Counts 4 of 5 ingredients. The other 1 aren't in our nutrition table and add nothing above, so the real totals are higher.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Whites trap air for lift, and the yolks set to give the cake its structure.
- Flour
- Its proteins set during baking to give the sponge its structure.
- Granulated sugar
- Sweetens the cake and keeps the crumb soft and tender.
- Lemon juice
- Acid helps stabilize the beaten egg whites so the foam holds.
The step that matters
Folding the whites into the flour. Folding gently keeps the air in the beaten whites. Stirring hard or overmixing deflates the foam, so the sponge bakes up dense instead of light.

- Figfits about as well
Fit is the average pairing score against sugar, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
