Plain Custards

Ingredients

Directions

Flavour the milk

  1. Tie together six or eight peach leaves, and boil them in a quart of milk with a large stick of cinnamon broken up.

  2. If you cannot procure peach leaves, substitute a handful of peach-kernels or bitter almonds, or a vanilla bean split in pieces.

  3. When it has boiled hard, strain the milk and set it away to cool.

Make the custard

  1. Beat eight eggs very light.

  2. When the milk is quite cold, stir the eggs into it by degrees.

  3. Add a quarter of a pound of sugar gradually.

  4. Fill your cups with the mixture.

Bake and serve

  1. Set the cups in a Dutch oven, and pour boiling water round them to reach nearly to the tops of the cups.

  2. Heat the oven lid by standing it up before a hot fire, then put hot coals under the oven and on the lid.

  3. Bake the custards about fifteen minutes.

  4. Send them to table cold, with nutmeg grated over each.

  5. Or you may bake the whole in one large dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs set the custard as they cook, giving it a firm, tender body.
Milk
Forms the liquid base of the custard, carrying the flavour and setting with the eggs.
Sugar
Adds sweetness and helps give the baked custard a smooth, tender texture.
Cinnamon
Infused into the milk to add warm aroma to the custard.

The step that matters

Bake in a water bath. Surrounding the cups with boiling water gently heats the custard so the eggs set evenly. Too much heat makes the eggs curdle and turn grainy, so the custard should be removed once just set.

Swap the lemon

How well each one fits the dish's main ingredients (almond, sugar, white wine, milk, cinnamon, peach, egg):

  1. Vanillafits better
  2. Figfits better
  3. Apricotfits better
  4. Lemonthe original

Fit is the average pairing score against almond, sugar, white wine, milk, cinnamon, peach, egg. Candidates are from the same food group and used in at least 100 recipes.
