Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Enriches the sauce and gives it a smooth, rich body.
Sugar
Sweetens the sauce and helps balance the lemon's acidity.
Egg yolks
Thicken the sauce as they cook and give it a custard-like texture.
Lemon juice
Adds acidity and bright lemon flavour.

The step that matters

Cook over boiling water until mixture thickens. Egg yolks thicken through gentle heat; if the sauce gets too hot it can curdle or scramble. Cook steadily and stir so it thickens smoothly.
