Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the milk into a smooth, set cream as it cooks.
Baker's chocolate
Provides the chocolate flavour and dark colour of the cream.
Egg whites
Beaten whites add air and lightness to the cream's texture.
Milk
Forms the creamy base that the starch thickens.

The step that matters

Cook the custard until thickened. Corn starch must be cooked with constant stirring so its granules swell and gelatinize. Stopping early leaves a thin, starchy cream, while heating unevenly can cause lumps.
