Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour milk
Its acidity curdles the milk, forming the soft curd base.
Sweet milk
Adds moisture and body to the curd.
Egg yolks
Set during baking, giving the filling structure and richness.
Sugar
Sweetens the filling and softens its set texture.
Lemon
Juice adds acidity and grated rind adds bright aroma.
Almonds
Add a crunchy topping and a nutty flavor.

The step that matters

Bake until firm to the touch. The egg yolks set as they heat. Underbaking leaves the filling runny, while overbaking makes the eggs tight and grainy, so check firmness rather than relying only on time.

Swap the almond

How well each one fits the dish's main ingredients (milk, sugar, egg, lemon):

  1. Milletfits about as well
  2. Almondthe original
  3. Pistachiofits about as well
  4. Walnutfits about as well

Fit is the average pairing score against milk, sugar, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
