What each ingredient does

Light brown sugar
Provides the main sweetness and, when boiled, sets into the brittle, chewy structure of the taffy.
Molasses
Adds deep caramel flavor, darker color, and some moisture that keeps the taffy from setting too hard.
Butter
Adds fat that softens the texture and gives the taffy a rich, buttery flavor.
Vinegar
Acidity partly breaks down sugar, which helps prevent grainy crystals and keeps the texture smooth.
Vanilla
Adds aromatic flavor that rounds out the sweetness of the sugar and molasses.

The step that matters

Boiling to the brittle stage. Sugar syrup changes quickly near the end of cooking. Stopping too early leaves the taffy sticky, while cooking too long makes it hard, dark, or burnt. Testing in cold water shows when the sugar has reached the right concentration.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, molasses, vinegar, butter):

  1. Vanillathe original
  2. Figfits about as well
  3. Raisinfits about as well
  4. Applefits about as well

Fit is the average pairing score against sugar, molasses, vinegar, butter. Candidates are from the same food group and used in at least 100 recipes.
