Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

What each ingredient does
- Gelatine
- Sets the tomato liquid into a firm gel as it cools.
- Stewed tomatoes
- Provide the main flavour and the liquid that the gelatine sets.
- Lemon juice
- Adds acidity that brightens the tomato flavour.
The step that matters
Pour when half cold. Gelatine sets as it cools. Pouring while the mixture is still very hot delays setting, while waiting too long lets it firm before it fills the moulds.
