Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks thicken the lemon filling, while whipped whites form the meringue topping.
White sugar
Sweetens the filling and, as pulverized sugar, stabilizes the meringue.
Lemons
Zest and juice provide the bright, sour flavor of the filling.
Flour
Helps thicken the lemon filling so it sets rather than running.

The step that matters

Beating the egg whites to a stiff froth. Egg whites must be whipped until they hold stiff peaks so the meringue stays airy and does not weep or collapse. Any trace of fat, such as yolk, in the bowl can prevent the whites from whipping properly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, flour, egg):

  1. Raisinfits better
  2. Vanillafits better
  3. Lemonthe original
  4. Figfits about as well

Fit is the average pairing score against sugar, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
