Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to give the pudding a rich, tender body.
Sugar
Sweetens the filling and helps create a creamy, smooth texture when beaten with butter.
Eggs
Thicken the filling as they set and add richness and structure.
Lemon
Its juice gives tartness and its rind adds bright lemon aroma.

The step that matters

Add well-beaten egg whites last. Folding in the whites gently keeps the air they hold, so the filling stays light instead of deflating into a dense mixture.
