Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Adds sweetness and the deep caramel flavor that defines the filling.
Butter
Provides fat for richness and a smooth, tender texture.
Sweet milk
Supplies the liquid that cooks down into a thick, spreadable filling.
Eggs
Thicken the filling as they cook and add structure and richness.
Vanilla
Adds aroma that rounds out the sweetness of the sugar.

The step that matters

Stir constantly on the fire until very thick. Sugar and milk scorch and stick to the bottom of the pan when heated without stirring, which gives a burnt taste and dark specks. Constant stirring spreads the heat evenly so the mixture thickens smoothly.
