What each ingredient does

Full-grown green peaches
Form the pickled fruit itself, absorbing the spiced vinegar as the main ingredient.
Pure vinegar
Provides acidity that preserves the fruit and gives the pickle its sharp flavor.
Mustard seed
Adds pungent, sharp flavor that deepens as the pickle matures.

The step that matters

Repeating the hot vinegar pour over several days. Pouring boiling vinegar over the peaches each day keeps the brine hot and acidic, which helps drive off surface microbes and lets flavor penetrate the fruit. Skipping days or letting the liquid cool weakens this effect.

Swap the peach

How well each one fits the dish's main ingredients (vinegar, clove, ginger, mustard):

  1. Limefits better
  2. Cherryfits better
  3. Quincefits better
