Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. In a large bowl, combine sugar, rice, raisins, cinnamon or lemon flavoring, and salt.

  3. Pour in the milk and mix well.

  4. Transfer the mixture to a baking dish.

Bake and serve

  1. Bake for 2 hours until set.

  2. Serve with sweetened cream if desired, best when moist.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Provides the starch and body that thicken the pudding as it bakes.
Milk
Forms the liquid base that cooks into a creamy, set custard.
Sugar
Adds sweetness and helps the pudding brown lightly at the surface.

The step that matters

Baking until set. Rice keeps absorbing liquid and milk proteins set as they heat, so underbaking leaves a runny pudding while long baking dries it out. Check that the centre is set and no longer sloshes.

Swap the raisin

How well each one fits the dish's main ingredients (sugar, rice, cinnamon, milk):

  1. Vanillafits better
  2. Raisinthe original
  3. Coconutfits about as well
  4. Figfits about as well

Fit is the average pairing score against sugar, rice, cinnamon, milk. Candidates are from the same food group and used in at least 100 recipes.
