Ingredients

Directions

The book says “a hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cut the bacon into thin slices and spread one-third in a deep pudding dish.

Layer the dish

  1. Sprinkle the grated onion over the bacon, then add half of the sliced potatoes.

  2. Sprinkle half of the pepper and salt over the potatoes, then add the remaining potatoes.

  3. Top with the remaining pepper, salt, and bacon.

  4. Moisten the dish with 4 tablespoons of water and cover tightly.

Bake and serve

  1. Bake for 30 minutes, then remove the cover and bake for an additional 20 minutes until the bacon is crisp and brown.

  2. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw potatoes
Form the bulk of the dish and become tender as they cook in the moisture.
Fat bacon
Adds fat and flavor, and crisps and browns on top during the uncovered baking.
Water
Creates steam in the covered dish so the potatoes cook through.

The step that matters

Covering the dish tightly before baking. The sealed cover traps steam so the raw potato slices cook through evenly before the bacon is browned. Removing the cover too early can leave the potatoes undercooked and dry.

Swap the onion

How well each one fits the dish's main ingredients (potato, pepper):

  1. Capsicumfits better
  2. Carrotfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
