What each ingredient does
- Butter
- Fat that slowly absorbs the aromatic compounds from the blossoms, carrying their flavor.
- Nasturtium or clover blossoms
- Supply the aroma and mild flavor that the butter takes up during the long rest.
The step that matters
Letting the butter infuse. Fat absorbs aroma compounds slowly, so the butter needs to stay covered and in close contact with the blossoms for the full time. A short rest gives only a faint flavor.
