Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the fruit flavour and juice that pools around the dish once sugared and macerated.
Cream
Whipped into stiff peaks, it forms a light, airy topping that sits on the fruit.
Powdered sugar
Sweetens the berries and draws out their juice as it dissolves.
Lemon juice
Adds acidity that brightens the strawberry flavour.

The step that matters

Whipping the cream to stiff peaks. Cream under-whipped stays loose and slumps into the juice, while over-whipped cream turns grainy and starts to separate. Stopping at stiff peaks gives a topping that holds its shape on the fruit.
