Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Peel the melons and cut them in half, removing the seeds.

  2. Chop the apple and prunes together.

Fill and bake

  1. Stir in the lemon juice, vinegar, cinnamon, mace, and ginger.

  2. Fill the melon halves with the mixture.

  3. Place the filled melons in a baking dish partly filled with water.

  4. Bake in a moderate oven at 350°F (175°C) for about 40 minutes.

Serve

  1. Serve the baked melons cold.
