Why it works: Flour and milk are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 78,219 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Oat Meal Bread
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the oat mixture
Boil the oat meal in 1½ pints of salted water for 1 hour.
Dilute the boiled oat meal with the milk and let it cool completely.
Make the batter
Sift together the flour, salt, and baking powder.
In a large bowl, combine the cooled oat meal mixture with the sifted dry ingredients and mix until smooth.
Pour the batter into a greased loaf tin.
Bake
Bake in a moderate oven at 350°F (175°C) for 45 minutes, covering the loaf with paper for the first 20 minutes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Shared aroma: isobutyraldehyde (malty, green).
Flour and milk barely smell alike, yet cooks put them together in 78,219 recipes: they work on texture and structure more than aroma.
Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Oat meal
- Soaked and boiled to form a thick, moist base that gives the loaf its body.
- Flour
- Provides the gluten-based structure that holds the loaf together.
- Baking powder
- Releases gas in the batter, helping the loaf rise in the oven.
- Milk
- Adds moisture and softness to the batter and helps the crumb stay tender.
The step that matters
Cooling the oat mixture completely before combining. Adding warm oat mixture to the batter can start the baking powder reacting too early and soften the batter, weakening the rise in the oven.
