What each ingredient does

Oatmeal
Forms the body of the porridge as its starch thickens during slow cooking.
Butter
Adds richness and a smooth mouthfeel when stirred in at the end.

The step that matters

Cook slowly, adding hot water as needed. Oatmeal starch swells and thickens gradually as it cooks. Cooking too fast or letting the pot dry out can leave the porridge gluey on the bottom and thin or unevenly cooked elsewhere.
