What each ingredient does
- Oysters
- Provide the main filling and their briny flavor, and moisture bound into the cakes.
- Dry crackers
- Absorb the oyster liquor and bind the cakes, while their crumbs brown in the fat.
- Lard
- Conducts heat to the cakes and gives the crust a crisp, golden browning.
- Butter
- Adds richer flavor and helps the coating brown in the frying fat.
The step that matters
Frying until golden brown. The cakes are coated in cracker crumbs and fried in fat, so the surface browns quickly. Too little heat or too long a fry can scorch the crumbs before the centre heats through, while too cool a pan leaves them greasy and pale.
