Maryland Stewed Oysters

Ingredients

  • 2 quarts oysters
  • 3 hard-boiled egg yolks
  • 1 tablespoon flour
  • ½ cup butter (1/4 pound)
  • ½ teaspoon whole allspice
  • ¼ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • juice of 1 fresh lemon

Directions

Put the oyster juice into a saucepan and let it simmer, skimming carefully.

Rub the yolks of the hard-boiled eggs and flour together, then stir into the juice.

Cut the butter into small pieces and add it along with allspice, salt, cayenne, and lemon juice.

Let the mixture simmer for 10 minutes, then add the oysters just before serving.
