What each ingredient does

Hominy
Forms the main body of the dish, softening as it steams and absorbs liquid.
Sweet milk
Adds richness and a creamy texture as it heats through with the hominy.

The step that matters

Steam with the pail covered tightly. Covering the pail traps steam around the hominy so it cooks gently and evenly while the surrounding boiling water does the heating. A loose cover lets steam escape and can leave the grain unevenly cooked.
