Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Melt the butter by stirring until creamy.

  2. Add sifted sugar and stir until light, then mix in allspice and cinnamon.

  3. Beat the yolks of the eggs for 15 minutes and incorporate them into the mixture.

  4. Beat the egg whites until frothy and gradually fold them into the batter.

  5. Add finely chopped orange peel, currants, stoned raisins, and brandy.

  6. Slowly dredge in the flour and mix well.

  7. Pour the batter into a straight-sided tin dish.

  8. Bake in a preheated oven at 400°F (200°C) for 3 hours, placing paper under the cake to prevent burning.

  9. Cover the top if it browns too quickly.

  10. Once baked, place the cake on a thin cloth on a sieve or basket lid to allow steam to escape.
