Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf, becoming tender and sliceable when cooked slowly in water.
Veal stock
Adds moisture and savory flavor, helping the layers bind and set overnight.
Hard boiled eggs
Provide firm, sliceable layers that show a neat pattern when the loaf is cut.

The step that matters

Cook the veal until very tender. Veal must be fully tender before layering, because it firms and sets as it cools and any toughness will remain in the sliced loaf.

Swap the onion

How well each one fits the dish's main ingredients (veal, celery, egg, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against veal, celery, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
