Hickory Nut Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and powdered sugar together.

  2. Add the cold water, then mix in the chopped nuts and fruits.

  3. Sift together the flour and baking powder, then add to the mixture.

  4. Fold in the beaten egg whites.

Bake and finish

  1. Pour the batter into a loaf pan and bake in a moderate oven at 350°F (175°C) for 45 to 60 minutes.

  2. If desired, add icing to the top and sides.

What each ingredient does

Butter
Creamed with sugar to trap air and give the cake a tender, rich crumb.
Egg whites
Beaten and folded in to lighten the batter and help it rise and set.
Flour
Provides the structure that holds the cake together as it bakes.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Hickory nuts
Add crunch and a rich, nutty flavor throughout the cake.
Raisins
Add moisture and concentrated sweetness in each bite.
