Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 300°F (150°C).

  2. In a bowl, cream together the sugar and butter.

  3. Add the eggs and mix well.

  4. Stir in the mashed potatoes and sweet milk.

  5. Fold in the chopped walnuts, chocolate, flour, baking powder, cloves, cinnamon, nutmeg, and raisins.

Bake

  1. Pour the batter into a greased baking pan.

  2. Bake for 30 minutes or until a toothpick comes out clean.

What each ingredient does

Butter
Creams with sugar to trap air and give the cake a tender, rich crumb.
Eggs
Bind the batter and add structure as the cake sets in the oven.
Flour
Provides the main structure that holds the cake together as it bakes.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Mashed potatoes
Add moisture so the cake stays soft and moist.
Sugar
Sweetens the cake and helps it brown and stay tender.
