Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Remove the gills and muscle from the oysters.

  2. Cover a small saucer with fine breadcrumbs.

Assemble and bake

  1. Place the oysters on the breadcrumbs and season with cayenne pepper and salt.

  2. Add a few drops of vinegar or lemon juice to the oysters.

  3. Cover with more breadcrumbs and dot with tiny pieces of butter.

  4. Bake in a 400°F (200°C) oven for 5 minutes, or until the crumbs are light brown.

What each ingredient does

Oysters
Form the main body of the dish and release their briny juices as they heat.
Breadcrumbs
Form a crust that absorbs juices and browns in the oven.
Butter
Adds fat that enriches flavor and helps the crumbs brown.

The step that matters

Bake until the crumbs are light brown. Oysters cook quickly and turn firm and rubbery if overheated, so the five-minute bake should be watched closely while the crumbs brown.
