What each ingredient does

Oranges
Supply the peel, which contains pectin for setting, plus the bitter flavor and aroma.
Lemon juice
Adds acidity that helps the pectin set and brightens the flavor.

The step that matters

Adding the lemon juice when almost cooked. Lemon juice is acidic and helps the orange pectin set into a gel. Adding it near the end keeps its bright flavor and helps the marmalade reach a good set without overcooking the peel.
