What each ingredient does

Pot roast
Provides the main meat, which becomes tender through slow simmering in liquid.
Butter
Browns the surface of the meat and adds richness to the cooking liquid.
Onions
Add sweetness and aroma as they soften and flavor the cooking liquid.
Carrots
Add natural sweetness and a firm texture that holds up during long simmering.
Potatoes
Add starch and body, absorbing flavor from the cooking liquid as they cook.
Flour (in the method)
Thickens the remaining cooking liquid into a gravy.

The step that matters

Browning the pot roast. Searing the meat over medium heat develops browned flavors through the Maillard reaction. Skipping or rushing this step leaves the gravy and meat flatter in taste.

Swap the carrot
