Shredded Wheat Oyster, Meat or Vegetable Patties

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the shell

  1. Cut an oblong cavity in the top of the biscuit and carefully remove the top and all inside shreds to form a shell.

  2. Sprinkle the shell with coarse sea salt and black pepper, then add small pieces of butter to the bottom.

Fill and bake

  1. Fill the shell with drained, picked, and washed oysters, seasoning with additional salt and pepper.

  2. Replace the top of the biscuit over the oysters and add bits of butter on top.

  3. Place in a covered pan and bake at 350°F (175°C).

  4. Pour oyster liquor or cream sauce over it before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Biscuit
Forms a hollow shell that holds the oysters while baking.
Oysters
Provide the main filling, delivering their savory, briny flavor as they cook.
Butter
Adds richness and moisture, carrying flavor through the filling as it melts.
Oyster liquor or cream sauce
Adds moisture and extra flavor to the filling just before serving.

The step that matters

Fill and bake in a covered pan. Covering the pan traps steam so the oysters cook gently and stay moist while the biscuit bakes; uncovered, the oysters can dry out and toughen.
