Cheese Tarts

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Combine sugar, currants, lemon rind, lemon pulp, and beaten eggs in a saucepan.

  2. Boil the mixture over medium heat until thickened.

  3. Line a pie pan or tart form with pie crust.

  4. Pour the filling into the crust.

  5. Bake at 350°F (175°C) until the crust is golden and the filling is set.
