Lemon Fruit Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the chopped raisins, lemon juice and pulp, sugar, egg, and water. Mix well until combined.

Assemble and bake

  1. Pour the filling into one pie crust.

  2. Cover with the second pie crust and seal the edges. Cut slits in the top crust for steam to escape.

  3. Bake for 30-35 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raisins
Provide the bulk of the filling and concentrated sweetness and chewy texture.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Egg
Binds the filling so it sets rather than running when sliced.
Lemon juice and pulp
Adds acidity and bright lemon aroma that cut through the sweetness.

The step that matters

Cut slits in the top crust. Steam from the filling needs an outlet during baking. Without slits, pressure builds, the top can split or bubble unevenly, and the filling may boil out of the pie.

Swap the lemon

How well each one fits the dish's main ingredients (raisin, sugar, egg):

  1. Vanillafits better
  2. Figfits better
  3. Lemonthe original
  4. Datesfits about as well

Fit is the average pairing score against raisin, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
