What each ingredient does

Cornmeal
Thickens the milk as it scalds and gives the pudding its body and grainy texture.
Eggs
Set during baking to bind the pudding into a custard-like structure.
Butter
Adds richness and fat, giving a softer, moister crumb.
Brown sugar
Adds sweetness and molasses flavor, and helps the top brown in the oven.
Milk
Hydrates the cornmeal and forms the liquid base that bakes into the pudding.
