Banbury Tarts

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the chopped raisins, lemon rind, lemon juice, beaten eggs, and sugar.

Assemble and bake

  1. Roll out the puff pastry and cut it into rounds the size of a saucer or squares.

  2. Place a spoonful of the filling in the center of each pastry round.

  3. Fold the edges together carefully to seal the filling inside.

  4. Bake in the preheated oven until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raisins
Provide the bulk of the filling and a chewy, sweet texture.
Eggs
Bind the filling and help it set as it bakes.
Sugar
Adds sweetness and helps the filling become glossy and thick.
Lemons
Add acidity and aroma from the rind and juice.
Puff pastry
Forms a flaky, buttery case that browns in the oven.

The step that matters

Fold the edges together carefully to seal the filling inside. If the seal is weak, the wet, sugary filling can leak out and burn on the baking sheet, and the tart may open up during baking.

Swap the lemon

How well each one fits the dish's main ingredients (raisin, egg, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Lemonthe original
  4. Datesfits about as well

Fit is the average pairing score against raisin, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
