Fish Chowder
Ingredients
Directions
Remove the bones from the fish and cut it into 2-inch pieces.
Cover the bones with water and let simmer for 15 minutes.
Use the water from the boiled bones instead of clam juice.
Ensure the fish is fresh, with firm flesh, clear eyes, and bright skin.
Wash the fish quickly in saltwater and remove the scales by scraping with a small knife.
Split the fish down the middle and remove the entrails.
To skin the fish, cut a thin strip down the backbone and slip the knife under the skin, pulling it off towards the tail.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
