What each ingredient does

Onions
Are the main vegetable, becoming soft and sweet as they cook slowly.
Milk
Gives a creamy, mild sauce as it simmers around the onions.
Butter
Adds richness and a smooth finish to the milk.

The step that matters

Cook until tender in the second water. Onions cooked too briefly stay firm and sharp, while cooking them gently until soft lets their sugars mellow and the texture turn tender. Checking for tenderness rather than relying only on time prevents undercooked centers.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper, milk):

  1. Potatofits better
  2. Capsicumfits better
  3. Tomatofits about as well
