Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff foam, they lighten the pudding and help it rise and set airy.
Egg yolks
Enrich the custard and help bind the pudding as it sets.
Bread crumbs
Soak up milk to form the body of the pudding, giving it a soft, tender crumb.
Sugar
Sweetens the pudding and stabilizes the whipped egg whites.

The step that matters

Folding the egg whites into the base. Whipped egg whites trap air that gives the pudding its lightness. Stirring them vigorously deflates the foam, while gentle folding keeps the air and yields a lighter, more even texture.
