Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base of the soup.
Butter
Carries flavor and helps form the flour roux that thickens the milk.
Flour
Thickens the milk with the butter, giving the soup body.
Mushrooms
Provide the main earthy flavor and bulk of the soup.
Cream
Adds richness and a smooth, velvety body.
Egg yolks
Thicken and enrich the soup as they set gently with heat.

The step that matters

Adding the beaten egg yolks and cream. If the soup gets too hot or boils after the yolks go in, they can scramble and turn grainy. Keep the heat moderate while stirring so the yolks thicken the soup smoothly.
