  3. Let the liquid cool.

  4. Remove the fat from the liquid.

  5. Reheat the liquid to boiling.

  6. Add 1 teaspoon of salt for each quart of liquid.

Cook the mush

  1. Sift in enough cornmeal while stirring to achieve a mush-like consistency.

  2. Boil hard for several minutes.

  3. Reduce heat and cook slowly for 1 hour, stirring occasionally.

  4. Stir in the chopped meat.

Set and fry

  1. Pour the mixture into bread pans.

  2. Set aside in a cool place to firm up.

  3. Cut into ½ inch thick slices.

  4. Brown the slices in fat.

What each ingredient does

Cornmeal
Thickens the liquid into a mush that sets firm when cooled.
Pig's head
Supplies the meat and gelatin-rich broth that help the scrapple hold together.

The step that matters

Cook the cornmeal slowly after boiling. Cornmeal can scorch on the bottom and thicken unevenly if heat is too high, so stirring and a low, slow simmer keep the mush smooth and free of lumps.
