Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein; slow cooking in water makes it tender.
Salt pork
Renders fat for browning the chicken and onion, adding savoury flavour to the dish.
Flour
Thickens the broth into a smooth sauce as it cooks.
Chicken broth
Forms the liquid base of the sauce, carrying flavour from the cooked chicken.
Onion
Softens and sweetens in the fat, adding aromatic flavour to the sauce.

The step that matters

Gradually add broth until smooth. Adding liquid slowly to flour, while stirring, separates the starch granules so they hydrate evenly. Adding it all at once causes lumps that are hard to remove.

Swap the peas

How well each one fits the dish's main ingredients (chicken, celery, pork, onion, flour, bread):

  1. Beansfits better
  2. Sesamefits better
  3. Lentilsfits better
