Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Liver Loaf

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Grind the calf's liver using a meat grinder.

  2. Season the liver with salt, pepper, cayenne, nutmeg, and mix in the eggs and melted butter.

  3. Transfer the mixture to a well-buttered mold or bread pan.

Bake and serve

  1. Place the pan in a larger pan filled with hot water and bake at 350°F (175°C) for 1 hour.

  2. Serve cold, garnished with slices of hard‑boiled egg and pickles or olives, or serve hot with a brown sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Forms the main body of the loaf, giving it its dense, savoury flavour.
Eggs
Bind the ground liver so the loaf holds together and sets when baked.
Melted butter
Adds fat and moisture, keeping the loaf tender rather than dry.

The step that matters

Baking in a water bath. Setting the pan in hot water surrounds the loaf with gentle, even heat. This keeps the eggs from overcooking and turning the liver grainy or rubbery.

Swap the nutmeg

How well each one fits the dish's main ingredients (liver, pepper, egg, butter):

  1. Parsleyfits better
  2. Sagefits about as well
  3. Nutmegthe original
  4. Thymefits about as well

Fit is the average pairing score against liver, pepper, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
