What each ingredient does

Milk
Forms the liquid base that the starch and yolks thicken into a custard.
Corn starch
Thickens the milk as it heats, giving the pudding its body and smooth set.
Egg yolks
Add richness and help thicken the custard as it cooks.
Sugar
Adds sweetness to the custard.
Meringue
Forms a light topping that sets and browns in the oven.

The step that matters

Stirring the starch custard constantly. Cornstarch thickens as it heats, and without constant stirring it can lump or scorch on the bottom of the pan. Stirring until smooth keeps the custard even and silky.
