Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly once it cools.
Sugar
Sweetens the jelly and balances the tartness of the juices.
Lemon juice
Adds acidity that brightens the flavour of the orange juice.
Orange juice
Provides the main liquid and the orange flavour of the jelly.

The step that matters

Soften the gelatine in cold water. Gelatine must hydrate fully in cold liquid before it is dissolved in boiling water. Adding it dry or straight to hot liquid can leave lumps or weaken the set.
