Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the sherbet and lowers its freezing point, keeping it softer and scoopable.
Egg white
Adds foam and air to the frozen mixture, giving a lighter texture.
Berry juice
Provides the main flavour, colour and liquid base of the sherbet.
Lemon juice
Adds acidity that brightens the fruit flavour and balances the sweetness.

The step that matters

Adding the egg white just before full freezing. If the egg white goes in too early or too late, it will not whip into the mixture evenly. Adding it while the mixture is partly frozen lets it fold in as a foam and keeps the texture light rather than icy.

Swap the berry

How well each one fits the dish's main ingredients (sugar, lemon, egg):

  1. Orangefits better
  2. Vanillafits better
  3. Limefits about as well
  4. Berrythe original

Fit is the average pairing score against sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
