Boiled Ham

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Scrape the ham and wash it clean.

Boil

  1. Place it in hot water and add sugar, onion, and pepper.

  2. Boil for 8 hours or until the meat pulls away from the bone.

Trim, glaze and brown

  1. Remove from water and cut off the rind and excess fat.

  2. Place the ham in a baking pan.

  3. Pound together the remaining sugar and sprinkle it over the ham.

  4. Insert whole cloves into the ham and brown in the oven at 400°F (200°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ham
Forms the main body of the dish and becomes tender through long simmering.
Sugar
Adds sweetness and, when heated, browns into a glossy caramelized crust.
Onion
Adds savory aroma to the cooking water that flavors the meat.
Whole cloves
Add a warm, aromatic spice flavor to the glazed surface.

The step that matters

Browning the glazed ham in the oven. Sugar caramelizes quickly at high heat, so the surface can scorch before the glaze turns deep golden. Watch it closely while it browns.

Swap the onion

How well each one fits the dish's main ingredients (ham, sugar, pepper, clove):

  1. Capsicumfits better
  2. Mustardfits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against ham, sugar, pepper, clove. Candidates are from the same food group and used in at least 100 recipes.
